Cream Cheese Cupcakes vanilla wafers 4 package cream cheese 2 eggs 1/2 cup sugar 1/2 tpsn vanilla 1/2 tpsn lemon juice Combine cream cheese and sugar. Add eggs, one at a time; mix well. Add vanilla and lemon juice mix well. Place wafers in bottom of cupcake liner and fill liner 3/4 full. Bake 25 minutes in 350 oven; cool. Top each with either cherry or blueberry pie filling. Cakes puff up and shrink when cool. Makes 1 dozen cupcakes. ENJOY!!
